Bacon Frittata By Pig on a Spit - May 20, 2008 |

Recipe for cooking a breakfast meal called bacon frittata a Italian style omelette that is grilled.
Frittata - Type of Italian omelette that features fillings such as meats, cheeses, and vegetables. An omelette is cooked on a stovetop and served folded, however a frittata is partially cooked on a stovetop then finished under the grill and served open-faced.
Ingredients:
6 rashes of Smoked back bacon.
Cooking oil.
1 tspn. Chopped Fresh chives.
6 Green olives.
Fresh cherry tomatoes.
4 oz. Mozzarella cheese.
10 oz. Cooked new potatoes.
1 Red onion.
4 Eggs.
Directions for making bacon frittata:
Heat 1tbsp oil in a nonstick frying pan and cook bacon, cooked new potatoes, drained and thickly sliced, and 1 red onion, thinly sliced, for 20 minutes until just turning golden brown.
Beat together the 4 eggs with fresh chives.
Add to the pan green olives, pitted and sliced, cherry tomatoes and 100g Mozzarella cheese, roughly torn. Pour over the eggs and cook for 20 minutes until just set.
Finish cooking under a preheated grill until the eggs and cheese are cooked, brown and crispy.
Serves 2 people.
