Pasta with Bacon Spinach and Mushroom

This is an easy to prepare meal for pasta lovers that consists of bacon mushrooms and spinach.

Tarragon or dragon's-wort - A perennial herb often used in cooking. It is native to a wide area of the Northern Hemisphere from easternmost Europe across central and eastern Asia to western North America, and south to northern India and Mexico.

 

Ingredients:

500 g shell pasta

500 g spinach, trimmed, chopped

4 to 6 slices bacon, chopped

200 g mushroom, roughly chopped

80 ml dry white wine

2 garlic clove, crushed

300 ml light cream

1 tablespoon fresh tarragon.

 

Cooking Method:

Bring a large saucepan of water to a boil.

Add pasta and cook till just tender. Drain well.

Cook bacon in a large pan until its crisp.

Add mushrooms and cook until tender.

Add white wine and garlic and stir until the wine is nearly evaporated.

Stir in the cream and spinach and allow to heat through.

In a large bowl, toss together the prepared sauce and hot pasta along with the tarragon leaves.

Season with salt and pepper.

Serves 4 people.
