Recipe for Goetta a German breakfast food made from pork neck bones and oatmeal.

Traditionally a breakfast food, goetta is often served with ketchup, syrup, sugar, grape jelly, or eaten by itself.

Goetta is a peasant food of German origin that is popular in the greater Cincinnati area. It is primarily composed of ground meat and oats.

Usually goetta is made from pork shoulder or "Cali", but occasionally contains equal parts pork and beef. Goetta is typically formed into small loaves, and then cut into squares and fried, often in the oil left over from browning the meats or in bacon drippings.

 

Ingredients:

2 lb pork neck bones

1/2 qt water Boiling

6 peppercorns

1 sm bay leaf

1 c oatmeal

1 salt

1 onion,diced

1 cayenne

1 t allspice.

 

Cooking Directions for Goetta:

Cook meat in water with peppercorns and bay leaf until meat falls away from bone.

Grind meat.

Cook oatmeal in liquid with rest of ingredients and ground pork. Cook to consistency of mush.

Pour into loaf pans which have been rinsed in cold water.

When ready to serve, remove from pan, slice and fry in a little melted butter or drippings until brown.

Good for breakfast served with toast.
