Hot and Spicy Chili Pork Recipes

Spicy chili Recipes for some of the worlds hottest fiery chili dishes using pork, chilis, and jalapeno peppers.

Hot sauce, chili sauce, or pepper sauce refers to any type of spicy sauce made from chili peppers and other ingredients. There are many varieties around the world.

The chili pepper or chilli pepper is the fruit of the plants from the genus Capsicum. Chili peppers originated in the Americas, but are now grown around the world because they are widely used as spices in cuisine, and as medicine.

Chili has a long association with Mexican cuisine as later adapted into Tex-Mex cuisine. Although unknown in Asia until Europeans introduced it there, chili has also become a part of the Korean, Indian, Indonesian, Szechuan, Thai and other cooking traditions. Indian cooking has multiple uses for chilis, like bajji where the chilis are dipped in batter and fried to hot vindaloo Indian curries.

The most common species of chili peppers are:

Capsicum annuum - bell peppers, paprika, cayenne, jalapeņos, and the chiltepin.

Capsicum frutescens - tabasco peppers.

Capsicum pubescens - South American rocoto peppers.

Capsicum baccatum - South American aji peppers.

Capsicum chinense - Hottest peppers such as the naga, habanero, Birds eye and Scotch bonnet.

The record for the hottest chili pepper was assigned by the Guinness Book of Records to the Naga Jolokia, measuring over 1,000,000 SHU (Scoville units).
