A very tasty Chinese dish of pork cooked with lemon grass and a couple of chilies.

Ingredients:

250 grams Lean pork.

Rice noodles.

3 or 4 Red chilies.

1 teaspoon sugar.

1 to 2 teaspoons corn starch.

1 tablespoon Chinese cooking wine.

1/4 cup of chopped roasted peanuts.

Two stalks finely chopped lemon grass.

2 Chopped green onions.

1 teaspoon salt.

1/2 teaspoon ground black pepper

2 cloves chopped garlic.

 4 tablespoons cooking oil.

Cooking Directions:

Trim excess fat from the pork, and cut into thin slices.

Marinate pork with lemon grass, starch, pepper, and the Chinese cooking wine.

Heat your wok till the oil begins to smoke and add pork. Stir until the pork is no longer pink.

Add red chilies, sugar, salt, garlic, peanuts, and green onions.

Stir until everything is well mixed.

Dish on top of the rice noodles and serve.

For the rice noodles, soak them in very hot water until they're soft, drain the water, and they're ready to serve.
