Sour Soup with Rice Noodles By Pig on a Spit - Apr 24, 2008 |

Hot and sour soup can refer to soups from several Asian culinary traditions.
In all cases the soup contains ingredients to make it both spicy and sour. Hot and sour soup is reputed to be good for flu and colds. To increase the health benefits, feel free to add 2 or 3 teaspoons of finely chopped ginger.
Rice noodles - Noodles that are made from rice. Their principal ingredients are rice flour and water. However, sometimes other ingredients such as tapioca or corn starch are also added in order to improve the transparency or increase the gelatinous and chewy texture of the noodles.
Ingredients:
5 c Chicken stock, strained (fairly clear)
1 Green onion
1/2 c Rice stick noodles, soaked
1/8 lb Boneless Pork butt
1 tsp Thin soy Sauce
4 Black mushrooms
1 pinch Sugar
1/3 c Dried bamboo shoot tips
2 tsp White vinegar
Soaked and shredded
1/2 tsp Sesame oil
Cooking Method:
Wash and soak mushrooms in warm water for 30 minutes; shred.
Wash and soak dried bamboo shoots in warm water for 1 hour; shred in 1" pieces.
Slice Pork butt into 1" matchsticks.
Wash and trim green onion, shred on the bias into 1" pieces.
Soak Rice stick noodle in warm water until soft.
Cooking Soup:
In Sauce pan, heat broth. When it reaches gentle boil, add Pork, mushrooms, bamboo shoots, soy Sauce and Sugar; simmer 10 minutes.
Add soaked Rice stick noodles; simmer for another 10 minutes.
A minute before removing from heat, add vinegar and sesame oil; stir.
Remove to serving bowl; garnish with shredded green onions.
Serves 4.
