Adobo - Philippines - Name of a common and very popular dish in the Philippines, it is considered their national dish. Manila pork adobo recipe

Adobada - Mexico - Generally pork marinated in a "red" chili sauce with vinegar and oregano. Our Mexican Carne Adovada recipe.

Bahn Mi Thit - Vietnam - A Vietnamese baguette made with wheat and rice flour or a type of sandwich traditionally made with this type of baguette. Try our Bahn Mi Thit sandwich recipe.

Caponata - Sicilian - Eggplant relish made from chopped fried vegetables - mostly eggplants and peppers, seasoned with celery, olives and capers, in a bittersweet sauce. Caponata recipe.

Cha Shao - Chinese - A kind of spiced Cantonese honey roast pork often called by the Cantonese Char Siu or Char Siew. Usually in America it is called Chinese BBQ Pork.

Cha siu baau - Chinese - Cantonese barbecue pork buns. The buns are filled with barbecue-flavoured char siu pork. They are served as a type of dim sum during yum cha and are sometimes sold in Chinese bakeries.

Chalupa - Mexico - A kind of tostada platter in Mexican cuisine. It is a specialty of south-central regions of Mexico, such as the states of Puebla, Guerrero and Oaxaca. Chili Verde - Mexican and Mexican-American - Stew or sauce usually made from chunks of pork that have been slow cooked in chicken broth, garlic, tomatillos, and jalapeño peppers. Chili Verde with Pork recipe.

Dinuguan - Filipino - Also called dinardaraan in Ilocano, or pork blood stew in English, is a Filipino savory stew of blood and meat simmered in a rich, spicy gravy of pig blood, garlic, chili and vinegar. Dinuguan recipe.

Frittata - Type of Italian omelette that features fillings such as meats, cheeses, and vegetables. An omelette is cooked on a stovetop and served folded, however a frittata is partially cooked on a stovetop then finished under the grill and served open-faced. Bacon Frittata Recipe.

Goetta - Germany - Traditionally a German breakfast food that is also popular in the Cincinnati area. It is primarily composed of ground meat and oats. Hummus - Middle East - A dip or spread usually made from cooked, mashed chickpeas, blended with tahini, lemon juice, salt and garlic.

Italian sausage - Italy - Pork sausage which is noted for its seasoning of fennel and/or anise. It is made in sweet and hot styles and is generally not cured, normally grilled and eaten with giardiniera or other vegetables. Italian Sausage Recipe.

Korma - India - A type of mild curry dish (sometimes spelt kormaa, qorma, khorma, or kurma) that originated in India and is made with yoghurt or coconut milk to add creaminess to the curry. Both vegetarian and non-vegetarian kormas exist. Recipe for pork Korma.

Lions Head - Chinese - This Shanghai (Chinese) pork dish is named Lion's Head because of the large size of the meatballs and because the cabbage when cooked looks a bit like a lion's mane. Recipe for Lions Head.

Lumpia - Pastries of the Philippines and Indonesia of Chinese origin and are similar to spring rolls. The recipe, both fried and fresh versions, was brought by the Chinese immigrants from the Fujian province of China to Southeast Asia and became popular where they settled in the Philippines and Indonesia. Ma Po Tofu - Chinese - A dish from the Sichuan province of China, and is fairly hot flavoured. As in most Chinese cooking the meat is never added in large quantities, just enough to flavor the dish. Chinese Ma Po Tofu recipe.

Merguez - Africa - Made with lamb or beef, and flavoured with a wide range of spices, such as sumac for tartness, and paprika, cayenne, or harissa, a hot chili paste that gives it a red color. Merguez Lamb and Pork Sausage recipe.

Moo shu pork - China - A dish of northern Chinese origin originally from Shandong. In its traditional Chinese version, moo shu pork consists of sliced or shredded pork chop meat and scrambled eggs, stir fried in sesame and/or peanut oil together with thinly sliced wood ear mushrooms (black fungus) and day lily buds.

Mutzbraten - Germany - Pound of pork, roasted on open birchwood fire, served with sauerkraut.

Porchetta - Italy - A spicy, tasty and moist boneless pork roast of Italian culinary tradition. In general, it's made from a young animal weighing less than 45 pounds or smaller. Puttanesca - Italy - A 'lady of the night', the name originated in Naples after the local prostitutes. The reason why the dish gained such a name is debated. Puttanesca recipe

Rice noodles - Asian - Noodles that are made from rice. Their principal ingredients are rice flour and water.

Sauerkraut - German - A traditional German food consisting of finely sliced cabbage fermented by various lactic acid bacterias, in some places it is called sour cabbage. Sauerkraut has good keeping qualities and a distinctive sour flavour. Pork and Sauerkraut recipe.

Schinkenspeck - Germany - Lean pork that has been dry-cured or smoked and aged it is also seasoned with juniper berries as well as other spices, sliced very thin and served hot or cold. How to make smoked schinkenspeck bacon.

Schweinshaxe - German - Pork hock served grilled and crispy with Sauerkraut or boiled as "Eisbein".

Schwenker or Schwenkbraten - German - Pork steaks, marinated in spices and onions and broiled on a grill that hangs on a chain over a wood fire.

Sheftalia - Greek - A type of crépinette, a barbecued sausage without skin, that uses caul fat, or omentum, the membrane that surrounds the stomach of pig or lamb, to wrap the ingredients rather than sausage casing. Sheftalia sausage recipe.

Singapore fried noodles - Hokkien mee - Chinese - Malaysian - Singapore - Dishes of stir-fried noodles in which pork and other ingredients can be added. Singapore fried noodles recipe.

Siopao - Filipino version of Chinese baozi or steamed buns also called salapao in Thailand. Like baozi, there are several siopao stuffing varieties which could be either Asado or Bola-bola that may be using pork, chicken, beef, shrimp, eggs, and possibly chopped scallions and water chestnuts as well. Szechuan cuisine - Also Szechwan cuisine, or Sichuan cuisine - Chinese - A style of Chinese cuisine originating in Sichuan Province of southwestern China which has an international reputation for being hot because of the common ingredient Sichuan peppercorn or fagara.

Thüringer Rostbrätel - German - A pork neck steak marinated together with onions in beer and mustard.

Vindaloo - India - Refers to a popular Indian dish brought to Goa by the Portuguese and became a Goan meal often served during special occasions.
