Pig Feet, Trotters, Knuckles and Hocks Recipes

Trotters The feet, and leg part of the pig are known under several different names depending on what part of the world you come from.

Pig Hocks - What the British call the upper part of a pigs trotter. Hocks are the lower part of the leg, between the shank end of a ham or picnic ham, and the pigs feet.

Trotters - This is the name for the actual feet part of the hog.

Pigs knuckles or tip - A lean boneless cut from the tip portion which is the front part of the leg above the kneecap also known as the forecushion of the hog. Braised or "red cooked" pork knuckle is a classic Shanghainese dish.

Pigs feet can be used in many different ways including the famous pea and ham soup and can even be pickled by placing them in tall glass jars and covered with a solution of hot brine containing vinegar, much in the manner of pickled vegetables such as cucumbers.
