Indian Hot Pork Curry By Pig on a Spit - May 11, 2008 |

Hot vindaloo Indian curry using pork that serves up to eight people.
Garam masala - A blend of ground spices common in Indian, Bangali and Pakistani cuisine, whose literal meaning is hotspice.
Ingredients:
1 1/2 lb Pork
4 cloves of garlic
2 medium size tomatoes
3 Medium onions
2" piece ginger
2 T Vindaloo paste (hot)
1 medium Potatoes
2 c Water
2 T Vinegar
2 t Salt
1/2 t Garam Masala.
Cooking the Indian Pork Curry:
Clean, wash, trim and dry pork and cut into 1 inch cubes.
Make the Masala with onions, ginger, and tomatoes.
Add the vinegar and Vindaloo paste and cook for around 2 minutes.
Add the pork and cook in a heavy pot for 1 and a half hours until the pieces are tender.
Cube the potatoes then add and cook the potato pieces coated in the liquid.
Boil down the amount of water, about, 30 minutes while the potatoes cook.
Serves 6 to 8 people.
