Marination - Also known as marinating, is the process of soaking foods in a seasoned, often acidic, liquid before cooking. Lately new research seems to indicate that marinades may discourage formation of certain HCAs (a cancer causing agent) in char-grilled meat.
Marinating food can not only be used to enhance meat flavors but also to tenderize tougher cuts of meat.
Marinades can be made by combining ingredients such as vinegar, lemon juice, or wine, or savory with soy sauce, brine or other prepared sauces. A marinade can also contain oils, herbs, and spices to further flavor the food.
Spice rubs - A mixture of ground spices that is made for the purpose of being rubbed on raw food including meat before the food is cooked. The spice rub forms a coat on the food. The food can also be marinated in a spice rub for some time for the flavors to incorporate into the food or it can be cooked immediately after it is coated in the rub.
Cooking with rubs is almost always done using dry heat where almost no water based liquid is used in cooking.
