Mexican Chalupa Recipe By Pig on a Spit - Apr 24, 2008 |

|
Chalupa - A kind of tostada platter in Mexican cuisine. It is a specialty of south-central regions of Mexico, such as the states of Puebla, Guerrero and Oaxaca. It is made by pressing a thin layer of masa dough around the outside of a small mold and then deep frying it to produce a crisp shallow corn cup. It is typically filled with shredded chicken or pork meat, chopped onion, and a piece of chipotle pepper or red or green salsa.
Pinto beans - These are named for their mottled skin (compare pinto horse), hence it is a type of mottled bean. It is the most common bean in the United States and northwestern Mexico, and is most often eaten whole in broth or mashed and refried.
