Old Style Traditional Pork Pie Recipe By Pig on a Spit - May 10, 2008 |

Recipe for baking an old style traditional pork pie just like grandma used to cook.
Ingredients:
For the filling:
450g pork shoulder finely chopped.
55g minced bacon.
55g pork fat finely minced.
For the pastry:
225g lard.
90ml water.
450g Flour.
Beaten egg yolk, or milk to glaze the pork pie.
For the jelly:
6 grms powdered gelatine.
Parsley, or other herbs (optional).
300ml water.
Baking Instructions for Pork Pie:
Pastry:
Place flour in a mixing bowl and crumble in the lard. Work until beginning to come together. Add a pinch of salt and start adding the water slowly, working until the dough breaks but not stretchable. Let it sit for about 1 hour.
Preheat your oven to 190C
Knead the dough on a floured surface and roll out about 5mm thick. Reserve enough pastry to make a lid. Use the larger piece of dough to line the base and sides of a 20cm plain pie dish.
Filling:
Mix pork shoulder, pork fat and bacon and season with salt and pepper and place this mixture loosely into the dough case.
Brush the edges of the dough with water and place the lid on top making sure it is sealed well by pressing with a fork or your fingers.
Brush the pie top with egg yolk or milk and bake in the oven for about 1 and a half hours until a nice golden brown color.
Remove pork pie from the oven and remove from the pie dish immediately. Leave the pie to cool and chill overnight.
Next day, make up the gelatine with the water. You can add parsley or other herbs if desired. Make a hole in the top of the pie and pour the gelatine in until the pie is completely filled.
Let the pie set in the fridge overnight for best results.
