Pig on a Spit
The problem of feeding a large crowd can be fixed with a pig on a spit. Good for any holiday, spit-roasting an entire carcass can in most cases become the focus of any celebration.
Although time consuming, the end result of roasting a whole pig on a spit is worth it but be aware that a spit roast can either be a complete success or an absolute disaster.
Spit - A large rotisserie is used for spit roasting a whole pig. The pig is skewered on a spit and the carcass suspended over hot coals. The horizontal spit revolves slowly to allow the meat to cook evenly. In the past rotisseries were turned by hand or by clockwork devices. Today, they are usually rotated by electric motors.
Today some well designed spits can effortlessly spin a rhino over a bed of red hot coals, so pretty much anything can be cooked in this manner including whole sheep and goats.
Bear in mind that the more meat you are cooking at a time on a spit, the greater the challenge, with the end results depending on many factors such as, the experience of the chef, the wind, the fire, and the weight of the carcass you are trying to cook.
