Recipe for making tasty medium hot to mild Italian pork sausages.

Italian sausage is a style of pork sausage which is noted for its seasoning of fennel and/or anise. It is made in sweet and hot styles and is generally not cured, normally grilled and eaten with giardiniera or other vegetables.

 

Ingredients:

1 tsp. or more crushed red pepper to taste.

3 feet medium hog casings.

2 1/2 lbs. lean pork butt, cubed.

2 tsp. coarse fresh ground pepper.

2 tsp. finely ground coriander.

2 cloves garlic, finely minced.

1/2 lb. pork fat, cubed.

3 tsp. coarse salt.

 

Italian Sausage Making Directions:

Prepare the casings as per instructions.

Grind the pork meat and fat together using a coarse disk.

Mix in remaining ingredients.

Stuff into casings and twist into 3-4 inch links.

Refrigerate. Use within 3 days or deep freeze.
