Dried beans should be soaked before boiling and they make very good soup with a small piece of bacon or salt pork boiled with them.
Simply place the beans to boil in plenty of water.
After they have boiled an hour, pour it off, and put in cold water. Add the pork meat or bones, and let them boil an hour longer.
You can also stir in a little thickening, with pepper, salt, parsley and thyme to taste and/or mix up some dumplings and drop in the pot half an hour before the soup is done.
