Whole Roasted Pork Porchetta on Spit

Spit roasting instructions for Italian style pork porchetta using a whole pig stuffed with herbs and spices.

Porchetta - A spicy, tasty and moist boneless pork roast of Italian culinary tradition. In general, it's made from a young animal weighing less than 45 pounds (20 k) or smaller.

 

Ingredients:

One whole pig.

Bay leaves.

Garlic.

Salt and pepper to taste.

Mixed spices.

Olive oil.

Onions.

Rosemary.

 

Spit Roasting Directions:

Clean the pig and shave its skin.

Stuff with garlic, onion, and rosemary, a few bay leaves, and season everything well with salt and pepper before you sew the cavity shut.

Rub the entire pig with olive oil.

The pig is attached to a spit and slow roasted, at about 320-350 F.

Optional - Baste with red wine as the pig is cooking to avoid drying out.

Cook over spit until the skin is a rich hazelnut shade of brown and the meat inside is still faintly pink.
